Escarpment Labs Voss Kveik – Liquid Yeast
Escarpment Labs Voss Kveik is a fast, reliable Norwegian farmhouse yeast that’s become a favourite for brewers who want quick turnarounds without sacrificing flavour. This strain is known for its high-temperature performance, clean fermentation profile at the right temps, and the ability to handle strong beers with ease. If you’re brewing in a warm space or you just don’t want to wait weeks for your beer to finish, Voss Kveik is a very practical choice.
Voss Kveik is also fairly forgiving. It has medium flocculation, so it’ll drop bright with a bit of cold conditioning, and offers high alcohol tolerance, making it suitable for bigger IPAs, strong ales, and experimental styles. Its character ranges from clean and citrusy to more expressive orange-like esters, depending on how warm you run it.
Flavour Profile & Fermentation Character
At the lower end of its range (around 25–30°C), Escarpment Voss Kveik tends to ferment clean and neutral with light citrus notes. This makes it a solid choice for modern Pale Ales, IPAs, and even clean Blonde Ales when you want fast fermentation but don’t want heavy yeast character.
Pushed hotter (32–42°C), it starts to show more of that classic kveik personality: orange zest, light tropical esters, and a soft, fruity profile. It is non-phenolic (no clove or spicy notes), so it won’t clash with hop-forward styles or sweeter malt bills. Voss Kveik is also non-diastatic, so you don’t need to worry about it over-attenuating like some Saison strains can.

This yeast is very versatile, especially for warm-ferment brewing. It works particularly well in:
- New England & Hazy IPAs – Fruit-forward esters pair nicely with modern hops.
- American Pale Ales & IPAs – Fast, clean fermentation with a slight citrus lift.

Fermentation Tips & Handling
Voss Kveik is famous for speed when you let it run hot. Escarpment lists a temperature range of 25–42°C. Here’s how you can tune it:
- 25–30°C: Cleaner profile, subtle citrus, ideal for “regular” ales you want clear and balanced.
- 30–35°C: A good middle ground – noticeable orange and fruit, great for IPAs and hazy beers.
- 35–42°C: Very rapid fermentation and more intense esters; fun for farmhouse or quick-drink beers.
Expect solid attenuation with a medium flocculation level. Give the beer a short cold crash to help it clear if you’re aiming for brightness. Because it ferments so vigorously, make sure you have good headspace or a blow-off tube, especially at the higher end of the temperature range.
Pairing with Hops, Malt, and Other Yeast
The light orange and citrus character of Voss Kveik works best with:
- Hops: Citra, Mosaic, Simcoe, Amarillo, Mandarina Bavaria, Ekuanot, and other citrus/tropical varieties. For more classic notes, Cascade and Centennial also play nicely.
- Malt: Simple, moderately light grists let the yeast and hops shine – 2-row or Pilsner base malt with a touch of Vienna, Munich, or light crystal works very well.
- Adjuncts: Citrus peel, late-boil or whirlpool additions, and dry hopping will layer nicely over the yeast’s natural orange character.
In mixed fermentations, Voss Kveik can be used as a fast primary yeast before adding Brett, bacteria, or another character strain. Since it’s non-diastatic, it won’t keep chewing through dextrins indefinitely, which gives you more control over how sour or funky the beer becomes later on.
