Chitosan: Achieve Crystal-Clear Wine and Cider

Chitosan is a natural fining agent widely used in winemaking and cider production to help clarify and stabilize your beverage. Derived from chitin, which is found in the shells of crustaceans, Chitosan is a positively charged compound that attracts and binds to negatively charged particles suspended in your wine or cider. These particles include yeast cells, proteins, and other organic matter that can cause haze or cloudiness.

How to Use Chitosan

Chitosan is typically used in conjunction with Kieselsol as part of a two-step fining process, providing superior clarity to your wine or cider. After racking the wine or cider off the lees (sediment), Kieselsol is added first, followed by Chitosan. The Chitosan binds to any remaining particles after Kieselsol has worked, forming larger clumps that settle to the bottom of the vessel. This process results in a bright, crystal-clear beverage. To use, dissolve Chitosan in a small amount of water, add it to your wine or cider, and gently stir. Allow a few days to a week for the Chitosan to work before racking again to remove the sediment.
