Simcoe hops are known for their complex dual-purpose qualities, offering both excellent bittering and aromatic characteristics. Originally developed by Yakima Chief Ranches in the early 2000s, Simcoe has become a favourite among craft brewers for its unique flavour profile and versatility. Its complex aroma blends pine, earthy, and woody notes with bright citrus and tropical fruit undertones, making it a popular choice for IPAs, Pale Ales, and other hop-forward beer styles.

Simcoe’s alpha acid content ranges between 12% and 14%, giving it strong bittering capabilities while also providing a smooth, well-rounded bitterness that doesn’t overpower the palate. In addition to its bittering power, Simcoe is cherished for its ability to add depth to the aroma, giving your beer a distinctive character that stands out.

Characteristics:

  • Alpha Acids: 12-14%
  • Flavour Profile: Pine, earthy, berry, citrus, and tropical fruit.
  • Aroma: A unique blend of pine, herbal, and fruity notes.
  • Applications: Excellent for both bittering and aroma. Commonly used in IPAs, Pale Ales, American Ambers, and more.
  • Substitutes: Amarillo, Mosaic, Cascade.

Brewing Tips: Simcoe is often used late in the boil or for dry-hopping to enhance its rich aroma, while its high alpha acids make it ideal for the initial stages of the boil for bitterness. It’s the perfect hop for brewers looking to balance sharp bitterness with a complex, fruity, and resinous aroma.

Bittering or Aroma? Simcoe is considered both a bittering and aroma hop, making it versatile enough to be used at any stage of the brewing process.
