Escarpment Lalbrew House Ale EL-D1 is a versatile, dry ale yeast that’s built for everyday brewing. Fermentation Profile & How to Use It

The recommended fermentation temperature range is 16–22 °C. Where you sit in that range will nudge the flavour profile a bit:

  • 16–18 °C: Cleaner, more neutral profile; great for crisp pale ales or lighter styles.
  • 18–20 °C: Balanced fruitiness; a nice zone for most IPAs, ambers, and stouts.
  • 20–22 °C: Slightly more esters; can work well if you want a bit more character in malt-forward beers.

With medium flocculation, EL-D1 will typically leave a light haze when young and clear further during cold crash or conditioning. If you want crystal-clear beers, a short cold crash and/or finings will help. If you’re brewing hazy styles, it’s already in a good range to keep some haze stability.

As a dry yeast, you can simply sprinkle directly onto well-aerated wort or rehydrate according to Escarpment/Lalbrew’s instructions (usually in sterile water around 30–35 °C for 15–20 minutes). Rehydration isn’t mandatory for standard gravity beers, but it can improve viability and performance, especially for higher gravity wort near the top of the 12–14% tolerance range.

Pairing with Hops, Malt, and Other Yeasts

Because EL-D1 is fairly neutral, it plays nicely with a wide variety of ingredients:

  • Hops: Works well with both classic and modern varieties. Try it with:
    • West Coast combos like Cascade, Centennial, Chinook, and Simcoe for clean, punchy hop character.
    • New World hops like Citra, Mosaic, Galaxy, and Nelson Sauvin when you want those big tropical and citrus notes to shine.
  • Malt: Handles simple 2-row-based grists for pale ales and IPAs, but also does fine with:
    • Crystal and Munich malts in ambers and reds
    • Roast, chocolate, and black malts in porters and stouts

EL-D1 is not a phenolic or diastatic strain, so if you’re doing mixed fermentations, it’s best as the clean primary workhorse. You can pitch it up front for a reliable base fermentation, then add Brett, sour cultures, or more characterful strains later for complexity.
