Developed as a cross between the Irish Ale and French Saison strains, Gulo combines the rich flavors of the Irish strain with the powerful attenuation of the French, making it highly effective at fermenting wort sugars. This non-phenolic and aromatic yeast is ideal for IPAs, stouts, Biere de Garde, and Brut IPAs, offering high attenuation for a clean, dry finish.
This strain also tests positive for the STA1 gene, a marker for Saccharomyces cerevisiae var. diastaticus, allowing it to ferment dextrins and achieve very high attenuation.
