True North Pilsner
There is something deeply satisfying about reaching for a cold Pilsner that feels familiar from the first sip, but still gives you enough flavour to keep coming back to it. Built entirely on BC Malted Gambrinus Pilsner malt, this beer has a clean golden colour and a smooth, substantial body. Pilsner malt is prized for its delicate grain character, bringing gentle notes of fresh bread, crackers, and a touch of honey-like sweetness. Using it as the complete malt base gives True North a wonderfully cohesive flavour. It feels light and refreshing in the glass, but never thin or watery.
The hop profile combines Northern Brewer, Hallertau, and Saaz, bringing together Canadian familiarity and classic European Pilsner character. Northern Brewer provides a firm, clean bitterness with subtle woody and herbal notes. Hallertau adds a softer floral and lightly spicy character, while Saaz brings the delicate earthiness and refined spice traditionally associated with Czech Pilsners.
At approximately 40 IBUs, True North has enough bitterness to feel crisp and distinctive, but balance is the key. The smooth Pilsner malt body keeps the hops from becoming sharp or overpowering, leaving you with a beer that finishes dry, refreshing, and remarkably drinkable. You will notice the hops, but they are there to keep each sip lively rather than dominate the experience.

Pilsner began in the Czech city of Plzeň in the 1840s, where pale malt and local Saaz hops created a brilliantly golden beer unlike anything drinkers had seen before.
